Ton Cortés

Tonatiuh Cortés Ortiz, known as Ton Cortés, was born in Mexico City in 1980. He initially moved to Barcelona to further his studies in medieval music. However, his career took a turn when he discovered his passion for artisan baking.

In 2013, he acquired a bakery with an almost century-old wood-fired oven in Barcelona’s Eixample district, which he named Cloudstreet Bakery. He later renamed the establishment Suca’l. There, together with his team, he produces bread and pastries entirely by hand, using sourdough and organic flours.

His dedication and mastery in crafting panettone have earned him notable recognition. In 2019, he won the award for Best Panettone in Spain. In 2023, he captained the Spanish Panettone Team at the World Panettone Championship, where they achieved 2nd place for chocolate panettone and 3rd place for traditional panettone. In November 2024, he made history by winning the Coppa del Mondo del Panettone in Milan, becoming the first non-Italian baker to receive this distinction.

In addition to his work at Suca’l, Tonatiuh has been actively involved in events, training programs, and publications related to baking, establishing himself as an influential figure in the international artisan bakery scene.
